Rice Pudding Կաթնապուր

Կաթնապուր is one of my favorite summer desserts. This sweet treat is refreshing, sweet, and nostalgic. The recipe comes from my nana Susan and is reminiscent of summers as a child by the pool.


I



Ingredients:

1 Cup of Water

1 Cup of Calrose Rice

5 Cups of Milk

1 Teaspoon of Melted Butter

1 Pinch of Salt

Cinnamon


Instructions:


Pour the water into a large pot over the stove. Wash the rice, then add it into the pot filled with water. Once the water begins to boil, lower the heat, and allow the pot to remain on low heat until all the water evaporates. After the water has evaporated, pour the milk onto the rice and mix so the rice does not settle at the bottom of the pot. Continuously stir until the mixture begins to thicken, making sure the rice does not sink to the bottom. Once the mixture has thickened, add in a pinch of salt and the melted butter, and mix. Prepare your dish(es) to pour the mixture into before it hardens. Once all the Կաթնապուր has been deposited into the dishes, sprinkle cinnamon onto each of them and place them into the fridge to cool. Then enjoy!!
